Five Course Scotch and Cigar DinnerSeptember 23, 2010 Historic Water Street Inn  6 P.M. SOCIAL HOUR: BUTLER PASSED HORS D’OEUVRES~ Scapa 16 Year – Island ~ Scapa is produced in the same small island cluster, The Orkneys, where great scotches like Highland Park are produced. This 16 year expression of the Scapa replaces the 14 year version and offers additional complexity. The Scapa 16 year is a perfect marriage between the influences of the sea, as is found in other island Scotches and the sweet honey and heather notes.  7 P.M. START WITH: Lobster Scotch-Bisque with Crab Clawwith Vermonte and Chile Oil ~ Dalmore 12 Year – Highlands ~ The exceptional richness of The Dalmore spirit benefits from slightly longer maturation than is typically practiced in Scotland. This Scotch is aged in second fill bourbon barrels and then sherry casks from Spain in equal proportions. Couscous SaladOver Mixed Greens with a Herb Vinaigrette~ Balvenie 15 Year Single Barrel – Highlands~ This 15 Year Single Barrel is drawn from a single traditional oak whisky cask of a single distillation. While each barrel produces a unique whisky that will vary, the master distiller was seeking the foremost characteristics of honey, vanilla and oaky notes. Each bottle is indeed unique and unrepeatable making this a truly one of a kind experience.ÂFilet Mignon Stuffed with Bleu Cheese & Fried Oystersdressed with Bordelaise and Hollandaise with a Pork Belly Potato Hash ~ Laphroaig Quarter Cask – Island ~ We chose to pair this expression of an Islay Scotch with the flavors from the oysters in this dish. While the Laphroaig Quarter Cask is technically from the same region as the Scapa you will notice a significant difference, which characterizes Laphroaig’s Scotch.  Chocolate Hazelnut Torte with Butterscotch Ice Cream~ Auchentoshan Three Wood – Lowlands~ A.J. Crotty, the Bar Manager at Charlie’s Irish Pub, is quick to point out that Auchentoshan is unique as being from one of three distilleries in the lowlands to still produce Scotch Whisky.  $69.95 per person includes two handrolled cigars reservations required
